Made a nice spoon roast tonight. My butcher recommended that I try one because they had some prime cuts come in. He was damn right.
About 5lbs. Filled up the roasting pan with mushrooms, carrots, onions and potatoes. Olive oil, kosher salt, black pepper and Dillo Dust. The roast I coated in olive oil, kosher salt and butcher grind black pepper. There's a bunch of ways to cook these but I placed everything in a cold oven and set the temperature to 450. When it hits 450, let it cook for 20 minutes then reduce to 325 for 20 per pound. I let it rest for another 20 minutes. I don't normally like tanto, but there are a few out there done a way I like. I am finding I like the 0620/Phalanx tanto and the Sig Legion tanto. I have come close on a few 0620s.
