My two favorites are Riding Giants and Dogtown and Z-Boys. Both are by Stacey Peralta, the first is about the origins of big wave surfers and the other is about the origins of the modern skateboard culture. I can watch either multiple times any time, and they bothe have great soundtracks.

ETA: Cocaine Cowboys would be in third.

Netflix has an interesting documentary about Camp X in Canada.
They trained spy's there for WW2.

And one about training Helicopter pilots for Vietnam .

Both are very good.
