we have some chicago cutlery knives in the kitchen, not the most expensive but not cheap either, full tang blades, etc.
my wife dulls them like no other, and I don't have time to sit there with a sharpening stone..
so recommend me a cheap sharpener that works well

Double sided Japanese water stones can be had for a reasonable price and are the BEST for kitchen knives...

Just get a butchers steel and hit the knife a few licks every time you use it. You don't have to have a technical edge on some luxury steel to cut veggies.

If those are regular straight edged blades...

A Smith's hand-held sharpener. 3 passes through the carbide, 3 through the ceramic and you've got a damn good edge. Even a caveman can do it.

go to your local NAPA store, and get a Balkamp sharpener. (Small palm size handheld)

 






I bought one when I worked for one back in early 90's! Still use the very same sharpener after 20 years of use!!

This is what I use.  You can feel the edge coming on as the drag diminishes.

Spyderco for manual sharpening.

WorkSharp if you want to plug something in.

There's really no such thing as a cheap sharpener that works well.

People, you're slipping! Nobody has suggested a Dremel yet? They work fine for gunsmithing, why not knife sharpening?

I bought one of these from the local Costco business center ( specialty Costco that has a lot of restaurant supplies )

It's fast and does a decent job. perfect for my kitchen knife use. Cheap also and will last forever.

Sharpens a knife in about 10 seconds.

it was $15 at Costco vs $20 Amazon.

So did my grandpa. Had a cool imitation stag handled hunting knife(probably $5 at a hardware store) that he used for cutting whatever a saw was too much for in his shop. My brother got caught trying to steal it several times as a kid until he grew up. Had to put Grandpa in a nursing home this summer, my aunt went through getting whatever she thought was worth selling.



We made sure my brother got the knife though, so at least something of his won't be sold.

A lot of people pooh-pooh electric knive sharpeners but I like my Chefs Choice Professional Sharpening Station 130.
Most of my knives are cheap inexpensive ones but this thing keeps them incredibly sharp.
