I was a meat cutter for a few years in high school and college and thought I was hot shit when it came to sharpening a blade. I'm a few years older from them, but the man in this video has just schooled me. The sharpening angles are common sense, the rest of his techniques is OMG! Just watch and learn. I used his technque and then put my knife in a sharpening steel and it was seriously sharp.

cool. I watched my Dad skin hundreds of animals he trapped, but I never was taught how to sharpen a knife.

That is a cool video but it is about convex edges, none of my knives have a convex edge and I would not have a knife with a convex edge just because it takes a different/special technique to sharpen one. But as long as it workd for you.

it's good for any edge that's going to be in danger of chipping due to the way the blade is used, but most people wind up taking convex down to a secondary bevel anyway.

I would venture to guess that convex ground blades have won more cutting competitions than any other grind. They perform. They demand proper technique to properly maintain, but this is true of any high performance tool.

And like most high performance tools, they're completely unnecessary 99% of the time, and would be served better with something else.
