I am so jelly...that's the knife that got me started into Shun. I loved the way it felt in my hand...but I didn't buy it/ I only buy Shun knives when they're on major sale...and the 8" is never on sale. I have the 6" version...a paring knife, and a 7.5" BIG DADDY Santoku.
Where did you get it, and what did you spend? |

I have that knife. It's nice, but I like my Wustoff Ikon more. I have a MAC that I like at least as much as well.

I bought a Shun off of Craigslist for about 45% less than retail. Unused in a box. I only use it for very special cuts.

Shit wrong thread. How does it compare to the average 8" that has been sharpened properly? I know basically nothing about exotic knives but they look pretty. I keep my 50$ kitchen sharp as hell though. |

Sharper (16deg angle on both sides), and it stays that way much longer. I needed little more than the weight of the knife to cut those carrots.

It's an average 8" that's been sharpened properly with a nicer wooden handle and a cool damask finish. I'm assuming that by "sharpened properly" you're referring to a 60+RHB edge reading with full polish on a 16* concave bevel edge. IOW, it's mutherfucking sharp. |

So, lets talk knife sharpening.
Namely, I'm total fail at it with a wet stone. Does anyone have recommendations for an idiot proof sharpening method? Totally jealous of your knife btw. |

I've been wanting a new set for a while. My cheap Chicago Cutlery won't hold an edge for nothing. Maybe I'll tell the wife I want one for Christmas. |

I bought one of the Shun Santoku's and its easily my favorite kitchen knife. Great product IMO.
I also have a block of the cheaper stamped Wusthoff's and they don't see nearly as much use as the Shun.

When it comes time, I'm going to try this: (Amazon sells it for $100, BTW). The stand is angled at 16*, so all you need to do is hold the knife parallel to the counter. If I fuck it up, I'll just send it to Shun in Oregon, for free sharpening. |

I have a 7" Premier Santoku and a Classic 4" Pairing. I love the Shuns. Incredible knives. The were running the 7" Santoku last year during the holidays for $99! Smokin' deal.
I'll probably pick up the 6" Classic Chef's and the Premier Utility soon. |

I'm out of onion (I used my last two in a chili). They're my favorite thing to dice, when testing a knife.
I need to make a run to the grocery store, and come back with a shit load of produce. I want to cut shit.

I have the 10" Chef's, and the 4" paring. Be careful when sharpening it, when you mar the damascus-look finish, you'll want to kick yourself . Speaking of dicing onions, I'm going to go use mine to make some homemade marinara .

Those are nice (expensive) knives.
But I like my Wusthofs just fine. |
