I am so jelly...that's the knife that got me started into Shun.  I loved the way it felt in my hand...but I didn't buy it/  I only buy Shun knives when they're on major sale...and the 8" is never on sale.  I have the 6" version...a paring knife, and a 7.5" BIG DADDY Santoku.

Where did you get it, and what did you spend?

I have that knife. It's nice, but I like my Wustoff Ikon more. I have a MAC that I like at least as much as well.

Yeah...that's why I'll never own that knife...

I bought the three knives I mentioned above for $200 total.  They were all around half price from Williams Sonoma close to Christmas 2 years ago.  If I ever find that 8" under $100, it's mine!!!

I bought a Shun off of Craigslist for about 45% less than retail.  Unused in a box.  I only use it for very special cuts.

How does it compare to the average 8" that has been sharpened properly? I know basically nothing about exotic knives but they look pretty.
I keep my 50$ kitchen sharp as hell though.

It's an average 8" that's been sharpened properly with a nicer wooden handle and a cool damask finish.

I'm assuming that by "sharpened properly" you're referring to a 60+RHB edge reading with full polish on a 16* concave bevel edge.

IOW, it's mutherfucking sharp.

I bought one of the Shun Santoku's and its easily my favorite kitchen knife. Great product IMO.



I also have a block of the cheaper stamped Wusthoff's and they don't see nearly as much use as the Shun.

When it comes time, I'm going to try this:

 













(Amazon sells it for $100, BTW).







The stand is angled at 16*, so all you need to do is hold the knife parallel to the counter.




If I fuck it up, I'll just send it to Shun in Oregon, for free sharpening.

I have the Shun Kaji 8" chefs, and I LOVE it. Unfortunately i have a few small nicks on the blade, so I am going to send it to Shun for a free sharpening next month. My girlfriend's mother has the 7.5" santoku, and cleaver, both from the classic line, and I love those to. As a lefty, i find no problem with the D shaped handle of the classic line.  For sharpening I use a Shun classic steel.

I keep my eyes open for a early Chicago Cutlery for cheap.  
Should have bought the old one I saw in local small town hardware.
One of the Uncles took G'ma's.  
She knew cutlery.
I found one of her old knives in the back corner behind lazy Susan shelves in cabinet corner.
Ugly as sin but cuts like hell.  I think it was used for butchering when Dad was a kid.

No, it was just a cheap set.  The whole set of 8-9 knives was $50 at wal-mart if I remember right.  I did buy a $35 Chicago Cutlery santoku that holds a decent edge and it's my go to knife at this point.  It's far from great though.

I have a 7" Premier Santoku and a Classic 4" Pairing. I love the Shuns. Incredible knives. The were running the 7" Santoku last year during the holidays for $99! Smokin' deal.



I'll probably pick up the 6" Classic Chef's and the Premier Utility soon.

I have the 10" Chef's, and the 4" paring.  Be careful when sharpening it, when you mar the damascus-look finish, you'll want to kick yourself .  Speaking of dicing onions, I'm going to go use mine to make some homemade marinara .
