Ok, I was a little disappointed with how Last nights BBQ dinner pic turned out. So, I did another one.
NY Steak, Garlic Mashed Potatoes topped with potato string crisp, Green Beans Tossed in garlic, lemon, butter and pepper.  The beer is a Red Hook Late Harvest Autumn Ale.








Perfect...

Cast Iron and a broiler.  Put the Cast Iron skillet in the oven under the broiler for 45 min or so to get nice and hot. When ready to do the steaks take it out of the oven and put it on a med high burner. Put some salt (kosher or sea salt) and a dab or oil on the steak and rub it around to coat. Put the steaks in the pan and let them got for about a min min.5 depending on how you like it. Flip and put directly under the broiler for 3 min and presto... Let rest for five then enjoy.

Another thing you need to remember is to pat the meat dry before lightly oiling and putting it in the pan. Too much moisture will not let it brown.

Nikon D200...

It has a real hard time getting the white balance right under the lights in my dining and living rooms. I can't even pre-set it for correct WB.  Other wise I like it.
