I’ve gone to more of a keto/low carb lifestyle lately.

One of my favorites is keto fried chicken thighs.

I brush boneless/skinless thighs with a thin coat of Hellman’s Mayonnaise, and coat with grated parmesan cheese.

Air fryer for 8 mins or so. It’s fantastic!

fried eggs in butter.  salad with yum yum sauce.
chili.  using Rotel chili style diced tomatoes.. pretty low carb.  beef stock, ground beef... no beans.... cheese

Another favorite of mine is creamy garlic/parmesan chicken.

Again, I use thighs, but you can use breasts.

I sear off boneless skinless thighs in a skillet. When they are brown, I remove them and toss in a little diced onion and garlic.
Deglaze the pan with a little chicken stock, add heavy cream and reduce.
When the sauce thickens, I add a little parmesan cheese, and spinach.
Spoon that over the cooked chicken and serve. Attachment Attached File

Any.
Probably mottzerella cheese in those


Be mindful that shredded has starch added,  so dont use it.

I havent been doing it lately, but I really liked to do this pizza recipe.

1 lb italian sausage. Get from a butcher and make sure theres no bullshit additives. Most of the packaged stuff has unnecessary carbs.

1 lb mozzarella cheese. Better cheese will obviously be better. Remember that the packs of pre-shredded will also have added carbs.

San Marzano Tomatoes. I usually just get the 14 oz can of peeled to make the sauce. Add seasoning to taste. I always did 1 tspnish each of garlic, onion powder, basil and oregano

Have your tomato sauce on the stove, youll want it to be hot when you add it.
Mold 1 lb of italian sausage to a 12" cast iron skillet and bake in the oven at 375. The trick is to spread it evenly thin on the bottom and have a good high lip around the sides, as this will be a deep dish pizza. I also put a 10" cast iron skillet in the oven to heat up.
Once the sausage has cooked most of the way (10-12min) through, it will have shrunk a bit and need to be drained. The best way to deal with this is to have your second 10" cast iron skillet ready and just sort of slide the now crust shaped sausage patty into it. It will fit perfectly.
Now, add your mozzarella to the sausage crust. Big slices seem to give me better results than shredded. Once the cheese is laid down, cover it with the sauce, and return it to the oven for another 20-30 mins.
Allow it to cool down a bit before slicing so that it stays together.
Enjoy thoroughly.

I make a cauliflower crust once in awhile.   It takes some effort, and do not use frozen cauliflower.  If you do you'll never get enough liquid out to make a good crust.

I use goat cheese with herbs.  If I didn't know it was cauliflower, I'd never guess.

Keto chicken nuggets:

Breast meat sliced in cubes to your size liking.

Egg wash the chicken en route to next step.

Spicy pork rinds pulverized in zip lock then used as ‘breading’.

8 min in air fryer.  

Bad ass tasty, easy, fast to make.

Crack cocaine Chicken.

Chicken breast or thighs

Throw in the crockpot until you can shred the chicken remove as much liquid.

Then add a package of cream cheese to the chickens and mix it. Add garlic and cheese let it all melt together. Put Chicken in a bowl add Green onions and bacon bits.

This is very addictive hence the name.
