I had to dig up some of the wire for my sprinkler system and accidental scraped off some of the sheath covering the individual wires.  What type of tape would be best to wrap it up again considering it will have to withstand a lot of water and being buried?

Good electrical tape will do just fine. If you have any silicone laying around maybe put a dap of that on there but the tape will be just fine

Liquid tape. It's in the electrical section at Lowe's/Home Depot.

I'd consider heat-shrink tubing.

just cut the damn wire and resplice it with a direct burial wire nut(s) 3 years from now when it shorts to ground your gonna spend hours searching for it.
