So Its pretty much a proven fact that a 75gr bullet has better accuracy in a sig556 than a 55gr one, right? I've just recently seen some 77gr and even 90gr loads. Assuming your using quality ammo, how do you think they would they perform?

The sig has a 1:7 twist rate which really is what governs what weight bullets your gun will like and so is good to go for the heavier loads. That being said the heavier the better is not a strategy for accuracy. It is a balance based on the gun and ammo. See the stabilization table a little better than half way down:

77gr is about the heaviest load that will fit in a magazine (heavier bullet = longer length). You can find custom magazine blocks for single shot capability for heavier loads for competition use from say Brownells but that is obviously for very specialized use and not generally practical. Read up on that link. You will probably learn more than you ever wanted to know.
