Looking to get into the long shots and am considering building an AR-10 or a Remington 700. Thoughts, experience?

Really depends on how precise you want to shoot and how fast you want follow up shots.
On average
Good AR-10T 1.5MOA
700 .5moa

a quality .308 platform AR is more then capable of shooting just as good a a bolt. it'll just cost you a bit more to built it.
if you really want to go long with an AR you might consider a 6.5 Creedmore or .260rem
I have a .308 DPMS SASS thats a 3/4MOA rifle.  (ten shot groups with factory non-match hunting ammo)
also have a DPMS REPR in .260rem with a custom 24" sst Kreiger bbl that turns in .3 MOA and sometimes better. (with handloaded Berger 140gr VLD's)

Thanks for the info so far guys. What do you think about Remington's new 700 Target Tactical? I like what i've read about the 5-R rifling but don't have personal experience with it.  Consensus so far is the 700 though. With the tech that we have now and shoots i've seen, any reason an AR platform cant be better? Or do the semi's still fall behind the bolts?

Of course not. But you can get a 700 equipped for long range/precision competition for a lot cheaper than an equivalent AR10. From a cost/benefit perspective, I'd go model 700.

My point is there are many options out there other than the 700 that will shoot just as good if not better.  Like FN, Savage, Tikka, etc.  To say that the 700 is the only thing worth using is ludacris.  Which is what the post I was quoting was doing.  Remington might have more aftermarket options but that doesnt make it a better rifle.

My thoughts, quickly...

Theres just as good of platforms as a 700. Dont discount Savage, Tikka and many others.

Theres better calibers than 308 for long range shooting.

Bolt I would probably do a Savage in 260 or 6.5 Creedmore. Semi would probably be some customer build with a Ma-Ten and a Krieger barrel again in 260 or 6.5.

Look man I'm gonna do the uncommon here and apologize for the full retard comment.  I wasn't calling you one its just a line from a movie.  My original comment was that the 700 is not the end all/ be all of rifles thats all.

Anyways here is a recent link from the Precision Rifles forum with some useful info.  There is a lot more info there if you haven't been there yet.  Its a subforum in the Armory.
