when pickling eggs, do you pour boiling vinegar into your jar full off pealed eggs or are you guys doing the boiling water bath method on  the finished jars?  Seems to be a lot of people her just pour boiling vinegar over the eggs.    I dont want to have to refrigerate the finished jars.

This guy does it pretty good. No boiling vinegar. Never had pickled eggs but I want to try this.

I've been eating a lot of pickled eggs in the last 3 months.I 'cheated' at the start and just bought a gallon jar of commercially prepared eggs and have been adding more to the jar as I eat them.I also add onion chunks and more vinegar,red pepper and a dash of salt.
Pretty good!.......AND I've lost 24# .....!

although not required I do a sorta modified water bath method just to be sure I get good seals on the jars
when I was just pouring in the vinegar solution I would get about a 20% failure to seal rate
once I started using the bath method I didn't have any failures to seal

I think its because you really dont have much volume of hot liquid in the jars if its crammed full of eggs
bringing the jar temp up to begin with helps ensure sealing

I have canned cases and cases of quail eggs but once I figured up the time invested versus the "profits"
it just wasn't worth it and I quit

Red beet pickled eggs are the best pickled eggs.

INGREDIENTS
½ dozen hard boiled eggs
1 can small sliced beets (15 oz)
? cup white vinegar
? cup cider vinegar
2 tablespoon sugar
½ teaspoon salt
INSTRUCTIONS
Cook, cool and peel eggs.
Strain liquid from can of beets into small saucepan. Set beets aside.
Combine both vinegars, sugar and salt with beet liquid in saucepan.
Bring to a boil and simmer for 5 minutes.
Put eggs in an appropriate sized jar. Put beets on top.
Pour vinegar mixture over eggs and beets in jar.
Cover and refrigerate. Try to forget about them for a few days - at least two days. Three days and they're awesome...a few days more and they're perfect.
This recipe easily doubles or triples. Enjoy!
