Chili's, beef from a roast cut, salt pepper.  That's usually about it.  Unless I'm making it for someone who wants a ground beef and bean type of concoction.  Then anything goes.  I've put some coffee in there before, corn, bell peppers.  I mean, once the beans go in it's like, fuck it.  Right?

I smoke Chuck roast, then sear it, then cube it and put it in mine.

ETA, I did 11 quarts of pasta sauce and 20 quarts of chili last week, as seen here...

We tried the coco in a recipe that called for it.  Didn't like it.

Added a small can of chipotle in odobo sauce.  Much better.
