I am always changing my mind on what I want. How many guns am I allowed to sell per year with out getting in trouble for not having a FFL?

As many as you want. Go through a dealer for each sale (private party transfer).

Not true.  Despite their being your property, you are not allowed to sell as many as you want without your having an FFL.

The limits are 10 long guns and "infrequent" handguns per year.  The regs say "infrequent" which is ill-defined, but apparently the ATF enforces this after 7 handguns.

I wasn't sure, but I remembered reading something in California laws about 5 a year?
