Seems that STI dominates most match's

Their share of the total 1911 market is still tiny. Not that many people have over $2K to buy and modify a gun. Sure, models such as the Trojan retail for around $1K, but the "bread and butter" of STI (and SV, for that matter) is their "high capacity" models, which cost a nut and a half.
