I got a P2000 awhile back and have put 800 rounds through it. I have always had problems hitting left as well as my Dad and brother. Dad is a really good shot too so I know it's not just me. Well, I put in some Meprolights with my USIT and have to have the rear sight pushed over basically within a 1/16" of the right side of the slide for it to hit dead center at 25 yards. Is this a common occurrence. I LOVE the gun but it just looks stupid to have the sight pushed over that far.

That's odd.  Have you tried different ammo?  Is the barrel muzzle okay?

You should contact HK and see what they say.
