I asked this question of some Colt gurus a few months back when I was looking for a Commander.  They told me to try to pay $600 for any recent 80 Series in excellent or better condition.  I bought a blued NRM 1991/80 Combat Commander in mint condition for that this spring and am very, very pleased with the condition, quality, and price.  I don't know if stainless and Officer's changes it much, but there's at least one data point for you.

Mine was $550 back about 20 years ago. Around here when I do see one, which is not that often, they are usually in the $650-750 range.
