Can you do this?  I know it is illegal but I was thinking of pinning or welding the stock to make it stay in a fixed position.  But what I really want to know is if it will "look" alright.

It can be done.  You need the folder rear trunnion and you can replace the spring in the folding mechanism with a steel tube that will not permit it to operate.  If the AWB goes south you could replace the tube with the spring and it will fold.  The fixed trunnion would need to be removed and the folding trunnion installed with the correct openings milled into the receiver shell.
