If someone wants to buuild an AK, what info do they need?

It appears that some or all different AK makes / models need different receivers.  If I were to get, say, a Ewbanks or DCI receiver, how do I know I can get the correct parts (including the proper number of US parts) for it?

What other receivers are out there that could be used with easily-available, inexpensive parts kits?

Once I have a receiver and a box of parts, is there a certain amount of work that must be done by a gunsmith or machinist?  I can correctly use a screwdriver or hammer two times out of three.

Please only technical (no political) replies.  Yes, I'm in California.  Yes, I'm aware of SB23.  That isn't what I'm asking about
