For the Aimpoint 30mm rings pictured above? I overzealously overtightened one of them and managed to rip the entire head off! Can't seem to find any replacements anywhere on the web. Any online source would be much appreciated. I'm sure it's a common screw but I don't know the actual measurements. And for my next trick I'll attempt to remove the headless screw from the lower portion of the ring...

Have you tried ACE Hardware? I was pretty impressed by the common hardware in stock at my ACE. They carry a very large assortment of metric and SAE cap screws.
As far as removing the old sheared screw, you might need a screw extractor. These can also be had at ACE. Might be hard though finding a screw extractor that small in diameter.
