I've been looking for some software tool that would allow me to set the time period between shots on a webcam.  I would prefer that at the end of the recording period the shots be saved in an AVI file, or that they be saved as consecutively numbered GIF or BMP images that I can then use other tools to convert to an AVI or MPG video.  The range of time that I'd like to use would range from a shot a second for a minute or two, up to one shot a day for months.  

I've found a few tools that sort of do the job, but nothing that really seems to do the job right.  Does anyone here know of any software tools that will do simple time-lapse photography?

Try a product from PY Software called Active Webcam.  It lets you record video or stills with various settings.  One option with the stills is to record a still every so many seconds or minutes which is exactly what you are looking for.  They have a free trial version of the software and it will do everything you need it to do.
