6 oz garlic croutons
1/2 tsp black pepper
1/2 tsp cayenne pepper
1 tsp dried thyme
1 tsp chili powder
1 tsp paprika
1.5 tsp kosher salt
4 cloves garlic
1 green pepper
1/2 sweet onion
1 carrot, peeled
1 egg
3 lbs. ground beef
Pulse croutons and spices in food processor until croutons are broken up.
Pulse garlic, onion, green pepper, and carrot until they are of an even consistancy (not a puree).
Combine crouton mixture, veggie mixture, ground beef, egg, and salt in a large mixing bowl and gently combine. Don't overwork the meat.
Place mixture into a 10" loaf pan, then turn out onto a foil or parchment covered sheet pan. Bake at 325* until internal temp reaches 155*.
Glaze:
1/2 cup catsup
1 tsp cumin
1 shot hot sauce
1 shot worstershire
1.5 tbsp honey
Mix well. Coat loaf with glaze after 20 minutes of cook time.
