German Applesauce Meatloaf

1 1/2 lb Ultra-lean ground beef
1/2 lb Ground pork
1 c Bread crumbs
1 c Applesauce
1/4 ts Black pepper
2 ts Salt
1 Egg, beaten to blend
3 tb Ketchup
1/2 c Finely diced onion


Lightly oil a 9 X 5 inch loaf pan. In a large bowl, combine beef, pork, onion,
applesauce, beaten egg, bread crumbs, ketchup, salt and pepper; mix well. Place
mixture in a preheated 350 degree oven 1 1/2 to 2 hours. Let cool 15 minutes.

The Platonic meatloaf, of which all other meatloaves are mere shadows:

2 lb ground beef

1 lb hot bulk sausage (the kind in the tube for making sausage patties)

1 regular-size box of Cheez-Its

Take the plastic bag of crackers out of the Cheez-Its box. Poke some holes in it to prevent bursting. Crush the crackers into very small pieces. Dump the crackers into a mixing bowl, add sausage and  ground beef, and mix thoroughly.

Form meatloaves in bread pans and dump onto shallow baking pan (you can just hand-form 1 or more loaves if you like). Bake at 350 degrees for 50 minutes to one hour. Check for doneness by slicing amidships before removing from the oven, or use a meat thermometer to ensure that it is well-done.

Man oh man. You will be a happy eater and a hero to all who share your table. You can wrap whole loaves in aluminum foil and freeze for future consumption.

What is in the oven right now:

Italian Stuffed Meatloaf from Rachel Ray's $40 a Day show.

2 pounds ground beef
2 eggs
1 cup bread crumbs (up to 1 1/2 cups)
1 cup grated Parmesan
1 tablespoon Italian seasoning
1 tablespoon black pepper
2 tablespoons fresh chopped parsley leaves
2 cloves garlic, minced or pressed
1 onion, diced
1/2 cup ketchup
1/4 cup Worcestershire sauce
1 cup milk
8 slices cheddar
8 slices baked ham
8 slices bacon

Preheat oven to 350 degrees F.

In a large mixing bowl, combine ground beef, eggs, breadcrumbs, Parmesan cheese, herbs, garlic, onion, ketchup, Worcestershire. Mix well, gradually adding the milk (if it seems too moist, add bread crumbs until it is a consistency that will form a loaf without flattening. Spray a large baking or roasting pan with a non-stick spray and press the meatloaf out. Layer cheese slices and ham, covering the center line of the meatloaf, then close it together and tuck in the ends, forming a loaf which is oblong. Criss-cross the bacon strips to cover the loaf. Bake for 35 to 45 minutes or until the meat thermometer registers 160 degrees F.

Let rest 15 minutes, then cut and serve. Gravy is optional.

2 lbs. Ground Deer Meat (with fat added when processed) or Beef
8 oz of extra sharp cheese cubed
2 eggs
Half a package of saltine crackers
1 onion
1 bell pepper
salt, pepper, garlic powder
1 32 oz can of diced tomatoes

Chop what needs to be chopped, crush the crackers, mix all together and form a loaf. BAke at 375 for 30 minutes, pour an undrained 32 oz. can of diced tomatoes on top, bake for another 30 minutes. Meat loaf and tomato gravy

Meatloaf with melted velveeta cheese in it, cold the next day on wonderbread with barbecue sauce.   I prefer Sweet Baby Ray's bbq.  Eat it with ripple chips, sweet midgets and an iced tea.  Heaven, baby.

It doesn't matter what the recipe is- if it isn't wrapped with a quality, thick sliced bacon and a generous dusting of light brown sugar, it ain't meatloaf.
