Binging with Babish has a good recipe that I made last summer.

Makes a fantastic corned beef as well.

I just can't go back to the store bought now.

I have de-brined a corned beef brisket and smoked it to pastrami level.  It was great.  Nephew liked it too.  Need good jewish rye, provolone or swiss, a little sauerkraut and Russian dressing.....toasted with butter in a skillet

You are correct.

The only thing I'd change is the thickness of the slices. I like it super thin bordering on shaved. Must have horseradish and mayo.
