Rice, lentils, onions, olive oil and spices; How can something this simple taste so good?

I've made it a few times so far, anyway. I've discovered that brown lentils are better than green ones and that soaking the lentils overnight at the very least is mandatory.

Ingredients:

1 cup white Basmati rice
1 cup brown lentils
2 chicken bouillon cubes
2t. ground cumin
6T extra virgin olive oil
garlic powder to taste
ground pepper to taste
4-5 onions (the more the better I think)

Soak the lentils overnight (I do with a bit of garlic powder in the water to try and soak up more flavor, unsure if this actually does much) to 1.5 days in the fridge.
Boil lentils for 15-20 minutes while you chop onions and rinse your rice.

Once lentils are boiled throw them, the chicken cubes and the rest spices in the rice cooker with the rice. Add an appropriate amount of water (the brand of rice recommends 1.5c, I add a little more to account for the lentils absorbing some water) and 1T of the olive oil. Turn the rice cooker on.

Cook the onions on medium heat until soft or browned to your liking in the remaining 5T of olive oil.

With about 15 minutes left in the rice cooker's cooking cycle add the onions to the top of the dish along with as much of the oil you can get out of the pan. I let it sit on top so the oil drips down into the rice/lentils. With about 5 minutes left in the cooking cycle I stir the entire mass together. Let cooking finish, presto!

Really, it's pretty much cooking rice (in a rice cooker) with the cooked lentils and spices then mixing in the fried onions/oil at the end.

Have you ever tried adding the spices to the onions as they fry?  In general it's better to add spices to oil rather than water as the flavor compounds tend to be fat soluble rather than water soluble.

Nope, maybe I'll try that next time. Also I think I might add .5 to 1c more lentils to give it more protein, it'll be interesting to try.

At any rate, the batch makes 5-10 servings of this. It can't cost more than a few $ either.

Well yes, but it's spread over 5-10 servings. It's olive oil so it's a healthy fat. I divide portions by weight, it made 1kg of this stuff based on the ingredients listed.

You'd be surprised how much olive oil I can go through on my own. At least a liter in the past three or four weeks.

Oh, my house is the same; Bulk olive oil FTW!  But I mean you're not going to eat the whole RECIPE, and thus all the oil, in one sitting.

Skip the olive oil and fry up 4 slices of BACON, cubed.



Then remove bacon and fry the onion.  Add the rice, bacon and spices.  Get hot, then add water and soaked/parboiled lentils.  Season and cook until rice is done, 20 minutes.

if i made that, id like to throw some sliced and fried spam into it.  maybe some 1/4"x 1/4" rectangular prisms.  perhaps use some sausage if i had more time.

Now it's starting to sound edible. I'd also get rid of the Lentils, Rice, and Onions. Then it would be pretty good.

Wouldn't it be easier to open up a can of roast beef hash, and fry it.  Then top it with 6 slices of bacon and 3 fried eggs.  From my perspective, this recipe is a lot healthier than your rice crap.

ETA:  How come there is no pie selection in your poll?  Are you one of those?

Intriguing. That might work really well. Given the Middle Eastern origins of this dish I doubt it was prepared with bacon but, hell, almost anything can be improved with it.

There seems to be no common recipe and I have no idea of how authentic it tastes but most seem to involve cumin as the primary spice. To be honest I could care less how authentic it is so long as it tastes as good as it does.

Lentils have a lot of fiber and protein in them. Given that it is made with olive oil this is probably healthier than some processed meat and potatoes. Still carb heavy however, although the fat, protein and fiber in it certainly make it filling.

Lamb. with the flavors of onions and the earthy cumin backdrop a well spiced lamb would go great





I'm looking at removing some of the oil and making this soon.
