The version of The Carpenters' hit, "Superstar," sung by "Superfan" (actually Chrissy Hines and Gin Blossoms) that appears ONLY on the "Wayne's World 2" soundtrack is exceptional. With The Pretenders, Hines also covered the song accompanied by Nash Kato of Urge Overkill. It's a good rendition, too.

Blood For Blood covering Motorhead's Ace of Spades was pretty good, imho.
I've also got a whole compilation of punk/hardcore bands covering old Oi! songs. |

Framing Hanley - Lollipop http://www.youtube.com/watch?v=8xm––OXCMiY All the songs on MxPx's album on the cover were good http://www.youtube.com/watch?v=yDmKWVyKXHA |

Living Colour- Sunshine of your love
The youtube sound quality is horrible for this one. I have the goo quality on my Ipod and it sounds incredible on a good surround sound. |

As others mentioned, Cash's "Hurt" is incredible. Find these, they are pretty moving as well:
Rodney Parker's "Atlantic City" and Todd Snider's "Fortunate Son". |
