I heard somewhere that you can ship a rifle or shotgun within your own state without the use of an FFL...is that true?

It is perfectly legal as far as Federal law is concerned. State laws may vary.

Yes, for rifles and shotguns, you can. I've shipped several longarms straight to individual's doorsteps within Texas.
