I have a sealed bottle of caribbean hot sauce that has a "best if used by" date of 21 Feb 2010. I'm guessing that I bought it maybe 2005 or 2006 at the latest.

This brand (Matouk's West Indian Hot Flambeau) is hotter than hell and the ingredient label reads as follows:

INGREDIENTS:
aged pickled scotch bonnet peppers (pepper, vinegar, salt),
water,
salt,
modified cornstarch,
vinegar,
onion powder,
mustard,
potassium sorbate as a preservative,
soybean oil, spices,
xanthan gum,
colour (FD&C yellow #5)

So there's a lot of capsaicin, salt, and vinegar in here.

I can't imagine that anything could really grow in that type of environment. Contents don't look discolored.

Consume? or Toss?

Use it. The chili or capsaicin with vinegar won't allow anything to really grow. Have you seen them age hot chili by itself.

The flavor might not be quite as good, but it will be otherwise fine.

Matouks Flambeau rocks! The hottest stuff I've had that did not contain capsicum extract(which has a nasty flavor).

the listed date is a "best by flavor date" given the amount of pepper and other preservatives you listed, it'll be fine for a while

I know there are probably hotter Jolokia sauces out there, but this is easy to find (relatively speaking). The 1/4 tsp I tried was enough to have me hopping up and down for a while - it's by far the hottest I've tried.

Probably not, but the flavor is better.

BTW Matouk's Hot Flambeau is made with a variety of habanero/scotch bonnet pepper called a "scorpion pepper". Last year the Scorpion was championed as the new "hottest on earth". Of course, chile's heat varies from crop to crop.
