Since I'll be moving to Texas in the next couple of months, will I lose my NM CCW permit if I get a Texas drivers license? Also does anyone one know if I can transfer my permit so I don't have to take a class? Thanks guys.

As someone also soon to be moving (back) to Texas...will I need to wait 12 months before applying for said CHL class?  I already hold a MS CCW.

Texas does non resident permits.  Apply first as a non resident, then 6mo later re-apply as a resident.

Incorrect.  Read 411.173(a).    The moment you move here with the intent to establish residency you are GTG. Heck, you can do it now.
