So I'll be going hunting with a buddy of mine soon.  We'll be going for axis does and hogs.  He's from Houston and doesn't know of any good meat processors here in Austin.  Also, my buddy doesn't like to touch the rib cage to leave the entrails in the cage and not deal with them.  Of course I'd like to get some ribs if at all possible, which he doesn't know how to do.  Is it normal to drop off an entire hog to have them deal with it?  I'd also like to get some bacon out of it if at all possible.  Any suggestions?
