Has anyone used the earplugs with the baffle in them that allow you to hear normally but when a shot is fired the baffle closes reducing the dB?

Peltors? Those are more like ear muffs than plugs. They are cool but they get in the way sometimes when i shoot certain rifles

I just started using THESE. After trying the others, I found these to be the best.

I double up - I wear EP4s in ear and the Howard Leights PK90 linked to over my ears when I'm at an indoor range.  Outdoors, the EP4s do a decent job of blocking sound on their own, altho I still tend to double up.  
The baffles don't close tho.. there's a plug at the end that you can either push into a hole to further reduce the DBs or leave open to hear normal sounds a little better.  Overall, I like them a lot.

+1  The surefires work really well for outdoors havent tried them inside yet.
