Currently, in my combat gear, I own two m4's, one fal congo, and one XDTactical45 all in my SHTF gear. I have owned many weapons in my life, these are the ones that ended up staying.

I miss having a 1911 in my gear, and owning and feeding all these weapons is very expensive to say the least. (maybe if I didn't shoot so much, lol )

Anyway, thinking of cutting down to one rifle and one pistol. Here are my thoughts.

The M4's are great, little recoil, pretty accurate, very fast. 5.56 is plentiful, albeit more expensive these days.
The Congo is a little heavier, a little more recoil, but the 7.62x51 inspires much more confidence in me personally.
The XD is an excellent weapon, but still leaves me longing for 1911's again. The mag capacity isnt' an issue to me, I hit what I engage....

What would you do in my shoes? My combat vest can be configured for any mags, so that is not an issue.

    If you are only going to go with ONE rifle, take the FAL.  The 7.62mm round is far more versatile than 5.56mm.  With the FAL you will be more effective at any range, particularly over a 100 yards where the 5.56 falls off quickly in power.  The 7.62 will take game more effectively as well.  It also will perform better versus common body armor.  The big question to ask is "what do I need to do with my rifle?", in some cases the carbine may be a better option depending on your answer.  Strongly consider the carbine for "home defense" if you live in an urban area or have wife/children in the house.  Since you referenced a vest, I'm assuming you mean to carry your rifle afield, in which case the FAL wins out.
