In Epcot, eat at the different countries.  Germany is awesome, and so is Morocco and Japan.

+1000 on Morocco.

Garden Grill in Epcot in the Land Exhibit is also one not to miss.  Try to do the character dining here for lunch, then hit Morocco for dinner.

Do the character dining at the Liberty Tavern in Disney World, way cool for the kids.

Decent BBQ in Animal Kingdom near the big tree, I don't remember the name.

Character dining requires reservations, but is a good way for the kids to see the characters without standing in line to do it, and you get to eat.  All the character dinings I listed above are family style all you can eat.  We hit D-World about 3 times a year for the past three years, and have done at least one character dining each.  If memory serves, it runs us about 60 to 70 bucks for the three of us.

Have fun.  We'll be down there for a day or so the week of the 16th.

Do a lot of planning ahead of time. Know where to eat, where to stand and when to get there for parades and fireworks, where things are located, how to get around at and between the parks. Makes all the difference in the world on how much you will see and do in the time you have.There are plenty of web sites with tips for all this. We have done a daily planner of activities every time we have went and theres is not much we have not seen or done.
Hang onto your stuff. If it is left on a table or ride you will never see it again.
Keep a camera ready characters pop up all over the place for pictures,
As mentioned The land at Epcot is a must eat place. Make reservations early. We do it sometimes months ahead of time for some things like breakfast at the Castle.
Epcot probably has some of the best food places if you like a different types of food.
Last rip we took we stayed at the Boardwalk Inn. You could walk into Epcot and take a boat to MGM. Boardwalk area has places to eat and usually a little street entertainment sometime at night.
I saw a lot of people using the Disney dining plan last time. They got a ton of food and saved some money from what I could tell when I compared what we spent to what the plan would have cost.
I talk to people I work around sometimes after they have went. When I asked them about seeing or doing stuff they often say they did not know it was there to see or do. Research ahead of time is key. We usually keep alternate things to do in case time does not work out for what we want to work in that day.

My tips.
When the weather is warm if you go to Animal Kingdom go straight to the safari ride to see the animals first when they open. The animals are out eating then. Keep the camera ready.

Watch which way the wind is blowing for the fireworks in Epcot down wind is bad sometimes from the smoke. Also know where to stand to see it all.

Make sure you have good walking shoes well broken in before you go. My father inlaw took a new set of shoes last trip and got blisters first day. Gave him problems the whole vacation.

If you look on the walk ways you can see sometime where they put poles in to rope off the parades and you can tell where to stand to be at teh front.

If you take pictures a lot watch out which side of parade routes you stand on or the sun will mess up your shots.

This one has worked for us three time in a row. My wife twice, daughter, and wifes sister have all gotten on the Indian Jones show by wearing brightly colored shirts sitting near the center front and shouting As loud as they could when they pic people from the audience to be in the show.

Our last trip to DW was 6 years ago - went when my son was 5 and my oldest daughter was 6 mos.  I used the All Ears for a lot of my planning tips.  

Will you be going with kids?  

For the kids: we took an autograph book and a big Sharpie for the characters to sign.  The big Sharpie is easier for the ones in costume to hold.  We took a pic w/the digi cam with every autograph.  Cool, inexpensive keepsake.

On the allears site you can find where the pressed penny and quarter machines are located around the parks and hotels.  Those are also a cool, inexpensive treasure for the kids.  They even sell books you can put them in.  

If you are going with little ones take advantage of the baby rooms.  Each park has one and it was a life saver for us.  Great place to feed the little ones in a cool, quiet setting.  They even have rooms for nursing moms.  Can change diapers there, get baby food, etc.

We also used the Fairy Godmother's babysitting service one night so we could go out and ride the big stuff the kids couldn't - like space mountain.  

The big on-site hotels - like the Polynesian, Animal Kingdom, etc.  have kids clubs you can sign up for.  This was great when we went for my son.  We went in January.  He could play in the themed kids club while we went to eat at Epcot w/the baby.  

Our favorite place in Epcot at the time was Le Cellier in Canada.  The steak and chicken were AMAZING.  

If you are staying on-site take advantage of any extra magic hours - you can get into the park an hour earlier than those not staying in the park.

Don't try to do it all unless you are going to be there for a week and even then....
a lot of choices depend on ages of the family members
If you are going to Disney or the beach (Disney owns to 2 beach resorts, one at Hilton Head and another at Vero Beach) at least every other year, consider looking into the Disney Vacation club, if you think that is something you may be interested in, feel free to pm me and I can give you more details
we usually go every year , our favorite places to eat are :
Bomas at Animal Kingdom Lodge ( the lodge is a treat all by itself) all you can eat and delicious
for a great hamburger, Beaches and Cream at Beach Club, another beautiful resort
Le Cellier at Canada at World showcase at Epcot for lunch
Whispering Canyon at Wilderness Lodge for all you can eat western style, a lot of fun, esp if you have kids
all but Beaches and Cream usually require advance reservations
Best way to get a great room is to rent points or a reservation from a Disney vacation member, value price and a deluxe resort inside the magic, We can walk to MGM aka Mickey's Gold Mine aka Disney Studios and Epcot

Mission Space at Epcot, VERY INTENSE.........not for the faint of heart at all

Bibbidi Bobbidi Boutique
Dinner with princess
Teppan EDO @ epcot for my wife luvs haibachi food.
and i will try a few others of yall suggestion but going to hit all the rides we can prob going to use fast pass along with magic hours to get this done.
Takin my little girl 5yrs now. she is a big bell fan. going to try to get what we can get done in 7 days. keep the info coming it will be helpful and i will post picts when i get back.
Has anyone stayed @ coronado resorts had to use this one because the value resort was book for the whole month of april? got all info down i will need to work on a planner to have fun.

Take one or more CamelBak's.  Bottled water inside the park is very expensive, but the water from the free water fountains has a VERY heavy sulfur taste (fairly common in Florida).  One of my CamelBak's has an in-line water filter that eliminates most, if not all, of the sulfur taste.

I went back in September.  My wife used tourguidemike.com to plan the trip.  It was certainly worth the $20.00  This site gave a lot of information and is updated all the time.  We did and found a lot more because of this.  There is a completer section on food.  Good Luck

Have not stayed at Coronado but have stayed at the Caribbean Beach resort twice.  No complaints.

We did the Chef Mickey character breakfast at the Contemporary.  Lots of fun.

Universal was my favorite. We did one week, all parks. I was exhausted by the end. We carried the cooler backpacks with frozen water bottles in them. You can also buy one of their cups for like $4.00 and then refills are like .89 the rest of the time.

Margaritaville was pretty good. There's also the Emeril's restaurant, but we didn't get a chance to go in that one.

Coronado is pretty big...try to get closer to the main building if you can, it's closer to the Food Court (Pepper Market) and the pools..there are several transportaton stops for the buses all around the resort though.

Pools there are awesome, just recently redone....
