Be very careful messing with 'shade-tree' processors that do not have a reputation for hygenic methods of processing. Make dang sure you get some references from people that have used them before and check out the processing room. If you see something that doesn't look right (fat left on the equipment, buckets of scraps sitting around, etc., don't leave the meat with them. You might bring home something you don't want. Order a heavy duty meat grinder with sausage attachement and a band saw and you can do it yourself for a long time. |
