Went and bought a pork butt, rib tips, pork neck bones(nice and meaty) and hot Italian sausages this afternoon. The butt will cook about 9 hours. The rib tips about 4, the sausage and neck bones about 2. The butt will be pulled pork, the neck bones will go into black eyed peas, the sausage for sandwiches and the tips for snacking. I can't wait.

Here is a pic of the butt and neck bones starting to smoke.

Yes and no. I use a covered grill with offset charcoal and big hunks of hickory. Fire runs about 250*. I have to add charcoal and hickory after the 1st 90 mins and then again every 2 hours. So it is a "low and slow" smoke.  Been doing this for 30 some years.
