You appear to be grilling. Yes and no. I use a covered grill with offset charcoal and big hunks of hickory. Fire runs about 250*. I have to add charcoal and hickory after the 1st 90 mins and then again every 2 hours. So it is a "low and slow" smoke. Been doing this for 30 some years. |
