I am taking my family for week at my parent’s cabin in the Allegheny Mountains.  We are planning to bring our modern sporting rifles and pistols with us.  Since we are traveling interstate from NJ, the firearms will be unloaded, secured and transported 100% in compliance with the FOPA.  

My son wants to stop along the way and check out Penn State and take a tour.  According to the schedule published by the school, it looks like we will be on campus for around 5 hours.  
Am I correct in assuming that I cannot park the SUV on campus?  Or, are the PA laws reasonable about locked and unloaded firearms?

After futher research, I cannot find anything other than campus regulations prohibiting students from storing firearms in their cars.  So, reprasing, am I correct that I am good to go as long as the guns are unladed and in locked cases?

I believe that would be the case. There's no law that says you can't take your firearms onto campus, only campus policy. They can ask you to leave and if you don't you're trespassing. Aside from that I think you're good to go.

Notice however that I used the phrases "I believe" and "I think".

I am also unaware of any PA state laws prohibiting campus carry.

My opinion is that you will be fine with them locked in your vehicle as long as they're out of sight. If you're not comfortable with keeping them in your vehicle on campus, there is also plenty of off campus parking garage space.
