I had hunting plans in OR the first week in DEC that fell through and my dad and I are looking for something else to do with our time off.  Anyone know of a guide/outfitter that can do coyote or similar hunts down your way?  If you know someone, do you know if they can provide weapons?  The only thing we have set up for long range shooting is .308 and its just a little overkill.  

Also, anyone know of a spot to hunt quail or other birds?

There are plenty of outfitters down here, but you won't need one for small game hunting. We have so much public land down here in AZ you couldn't see it all in a lifetime. And your .308 is okay for coyotes, assuming you don't want the pelts. Quail and dove will be in season in December, as well as squirrels, rabbits, and predators. Where will you be in AZ and I can probably tell you where to go to kill whatever it is you want to.

308 is fine for the 'yotes.  I use a 30-06.

Quail season is open till february.  The numbers are low this year, but a guided quail hunt could be a nice father/son activity.
