has anyone done a trust locally to keep their arms in the family? I'm looking for a paralegal or lawyer that has done them before and has some idea what I'm talking about when I ask about them.

If you mean a trust for NFA items, a lot of people have. If you go to the NFA forum, there is a ginormous thread about it.
Most people use quicken willmaker, or quicken lawyer, but if you have an unusual situation, perhaps a lawyer would be best for you.
