I just bought a HK MP5K PDW transferable SMG w/ SEF trigger group. The sear is not married to the gun.

If I take the sear out, will the SEF trigger group still work as a semi auto only? If no, will any semi pack work that has been clipped and pinned without adjustment?

I don't thin so.
It should.

You will need to make sure the new pack has an MP5 ejector lever.

You will also need a butt cap to replace the stock and remove the vertical grip on te front. Without the sear, it has to be registered as a SBR or AOW to keep those parts on.

With no sear it will be semi only in two positions.

First, since the sear (pack) is the registered part, has the Host gun been SBR'd to pull the pack in the first place (read two tax stamps, being one for the SBR host, and the second for the sear/ trigger pack).  Unless the host started out at a SP-89 (pistol), then just pulling stock/forearm is not going to make the rifle (it the host started out as a HK-94 rifle) legal without the reg pack.

Pulling the safety sear will allow the pack to run in the semi setting, but in the full auto setting, your going to end up with hammer follow through, with the hammer down on a unfired round.  Again, the sear is a safety sear that will not release the hammer until the bolt is locked up, so if you looking to turn the pack into semi only, the get a semi selector and mill in another slot the same depth as the semi slot when the selector is to full.
