How hard is it to build a G3 compared to an AR or AK?

Are there any tutorials?

MUCH Much harder. You are actually having to weld parts of the gun together. I don't have the skill to build one but one friend has that has built a sweet HK51 pistol. (he happens to do metalwork for a living) Wouldn't want to discourage you, but its Exponentially harder.

The welding is the cocking tube and the trunion. If you don't weld the cocking tube on straight you will have a damn hard time racking that charging handle and it may affect the carrier movement.
If you mess up with the trunion, your may have a damn hard time headspacing the thing and/or it may not shoot straight.
If you can get over those 2 hurdles, you're ahead of the curve.

trunion presses into the receiver, barrel presses into trunion.

Apply the force wrong and you warp / bend / tweak receiver.

Assembly of HK9x series weapons requires special tools, special knowledge.
Accompanied by a hell of a lot of practice.

If you have the skills to build an AK, then you should be able to build a G3 clone.  Just do your online research to benefit from others' experience (Yes, the tutorials are out there).  That's what I did, and mine functions just fine.  Naturally, I took my time, afterall, you can't rush a weld job.  I started with a Portuguese kit, and used a JLD receiver, with JLD trigger pack box.  I also got a clipped and pinned lower from RobertRtg.com.  I got someone to "assist" me with the welding - all two minutes of work that it was - that was after the kit/receiver was prepped with al the weld points marked/pre-drilled on the receiver.  Unfortunately, G-3 clones are not like AK clones - if you screwup an AK receiver flat, then you just crank out another one - that's not the case with G-3 receivers.  Just be extra patient - and make sure all your parts line up properly BEFORE welding.  Hey, I'm in NY, too - I can loan you the AGI video, it's not the absolute best, but it will get you started towards completing your build
