My checks were cashed last week. How do I know when they go "pending"? And what does that mean?

Call in about three or four months, by then everything going on right now will have corrected itself. Once you get your pending dated, count eight to nine months from that date. By that date you should have your stamp.

Pending is anywhere from 4-8 weeks or more in some cases after check cashing. Once you go pending you have 8-9 months.
You know when you go pending when you call and ask. Don't call for at least 6 weeks after check cashing

Mine took 6 weeks to go pending after check was cashed. I think "pending" just means that it was assigned to an examiner.
