So, in my infinite wisdom I loaded a batch of 50 hornady 168gr amax projectiles with the powder charge I usually use for my 178gr amax load. What kind of FPS can I expect out of a 168 amax on top of 42gr of imr 4895 in a 308WIN?

Agreed ... about 2525+ FPS.
Frankly, about 42.0 grs is a good load for 168gr bullets.
