If I were to resize my brass, then mix it with unsized brass, how much work hardening would occur when resizing it again, without and changes to the resizing die?

i would say very little, the brass has already been sized and not expanded again through firing.

The brass really won't size again maybe a tiny bit but it should end up just about the same size it was before running it a second time

Depending on the brand of die, it might fold over part of the neck from the expander ball going back through the neck.
If you have some mixed cases, it would be easier to measure the necks to find any unsized cases.

This. If you want a quick go/no go gauge just use one of your bullets. It should slip pretty easily into a fired case and won't go into a resized one without serious effort.
