Brand new reloader here, working on getting the hang of things.  I'm using a Redding Big Boss reloader and a full-length sizing die.  What I'm finding is that after I size a case, I cannot fit the bullet into the case mouth, even after I champhor it.  What am I doing wrong?

Have you tried it in the press to see if it will go?

Im new to reloading too and I noticed this when doing my first loads. It was kinda a PITA to keep the bullet balanced while making it go into the die, but it would and I guess that means they had good neck tension as I could not push the bullet into the case anymore.

If you've sized the case correctly, the bullet must be pressed into the case mouth with your seating die.  The sizing process should shrink the case mouth to have enough tension to hold the bullet when you load it.

That means you're doing it right
