How does one measure the chamber and seating depth, ie, allowing for seating just off the lands (without simple trial-and-error, which is the method I currently use)?

In order to use the Overall Length Gage you'll need the modified cases/s.  Its also vital to use uniformly sized bullets, not just diameter and length but were the ogive begins.

Some rifle  chambers are to generous ( distance to lands ) for a custom OAL to be of much use, if you load the round long enough to get close to the lands then it will not feed properly.

Seating close to the lands is a pain in the ass.

Seating to magazine length is convenient and usually just as accurate. If your rifle don't shoot unless the bullets are jammed in the lands, get a new barrel.
