So, do you have the crimping die or are you trying to crimp with the bullet seating die? You mention both. If you are using the seating die, I'm not sure why you are able to adjust it. If you have a crimp die, do the insides move freely when you put pressure from the shellholder to it? I had a 30'06 Lee crimp die that I haven't used for years and it was rusted a bit from storage. Took several cleaning with WD40 to get it to free up. Your's might be stuck a bit. Hope this helps.

step 1.) remove head from hind quarters...

step 2.) repeat
