I do not know how an m2 MG works.  all the time I hear about checking the headspace when loading.  is it adjustable or something?  I can't seem to picture how it works in my head

The barrel screws off. When you put hte barrel on, you have to screw it in so that the length of the chamber is the correct distance from teh bolt face in order for the weapon to work. there's a little nipple that shows through a window on the bottom right of the receiver. You pull back the charging handle slightly until the nipple shows, screw the barrel in all the way, then back it out four clicks. Then you begin checking with the headspace go/nogo gauges. pretty easy, once you train doing it you can change barrels in only a few seconds, maybe 30 or 45.

This basically refers to the space needed to prevent gag reflex.

I thought headspace was actually the distance between your lap and the steering wheel.
