1.  Does the optics shroud come off?
2.  Are other optics available that fit under the shroud?
3.  Are iron sights included?

I don't own one, but I can answer your questions

1. Yes it does, press and hold tabs are used to take it off it track
2. It has a 1913 rail under the optics cover, so all optics that use such mounts will work ( I believe it's 7mm lower than the tactical rail)
3. There are back up sights built into the optic cover

I have the tactical version, but from what I understand, the rail that sits underneath the optic/shroud is standard picatinny width, but it sits lower than the rail on the tactical model, and is also polymer, not metal. I have a feeling you could install a red dot and some magpul back up irons and be just fine

i dug this up from the internet, as you can see, theres a plastic front sight on the hood, and a rear site built in as well, but no back ups under the hood
as you can also see, there is a polymer rail under the hood, that the scope is attached to
