I've seen a few of these bolt actions on sale a few times, and I am wondering how they are.  I know that they are not produced by Colt anymore.  I have never seen one in person.

How do these rifles compare to other Bolt actions in the same price range?  Would they make a decent deer rifle compared to a Remington Model 700 or something similar?

IIRC, Colt either bought or collaborated with Ultralight Arms on this rifle. It wasn't made for long and CDNN had a bunch they closed out. I never heard much either good or bad about them. I want to say they were made at the Saco factory which is a quality facility. I believe there was a recall on one caliber (.270 ?) but I don't recall why. I'm just going off vague memory so I could have some of that wrong. Their chief benefit was light weight. If you want a standard hunting rifle I'd probably go with something more common. If you want a lighter weight rifle and can find one for a good deal then the Light Rifle might be a good choice.
