I have an AR-15 & a Remington 597. I'd like to add a 3rd rifle to my collection. Leaning toward an AK, but don't know who sells NJ legal ones.

What other options should I be looking at? I'd like to get something other than a .22 or .223.

find your self a nice .308, maybe a bolt gun and set it up for some long range stuff.

What price range? Lots of AKs at good prices, ammo prices seem to have stabilized on AK ammo.

.308 AR variant -- very versatile, same controls, maintenance, etc. as your existing AR.

Familiarity is a good thing, IMHO.
EDITED:  Struck due to the OP's post below this one...

OTOH, AKs are fun and (relatively) cheap -- everybody should have at least one.

Doable <$500.

Spend another $100 and get a Service Grade Garand from the CMP.

You can get a Saiga 308 for under $500. Fills the need for an AK (a really good AK at that), probably NJ compliant, and it's .308

Get a M1 Carbine...Too much fun!!!

Who has the best prices on the Saiga & what about the WASR-10?

WASR-10 is not what you want; thats a Century hack job. If you want a good inexpensive AKM look for a SAR-1. I buy my Saigas from saigacentral.com

Isn't the SAR-1 stamped AK? I don't think that's legal in NJ

S&W 65 or S&W 66  these are beautiful stainless revolvers in 357 magnum quite possibly the best combat handguns ever made.

You can get them for under $350

An AK. Prices on all of them are getting ridiculous. Forget bolt actions and all that stuff. I love them too, but you can buy that stuff after all the "assault weapons" are banned. I don't know what NJ law forbids but if there was any way you could get one I would.

I already have a .22

I'm still unsure on sources for post-ban AKs that are not stamped AK

They are there, but not cheap. If you were willing to spend a little bit more and looking a little sooner you could have caught on of the InRange VZ58s for $650, lightyears ahead of the AK as far as ergonomics and handling.

From what everyone says, I can get AKs all day long for under $500

Everyone in New Jersey?

I'd recommend getting a surplus rifle.

Lee Enfields are the cream of the crop, but the ammo is a little hard to find.  If you just want to plink, you can get a Mosin and about 10,000 rounds of ammo for that $500 .
