Why, when you look at them from the side, does the barrel appear to be pointing downward? Is the mag well angled slightly forward? Maybe it's just me but there's something funny about them.

Are you talking about the ones w/o a front sight?  I think the gas block on those gives the illusion of a curved barrel.  I think you'll find that they shoot just as straight as the others.

My Armalite doesn't appear to have a curved barred (which I'm sure it doesn't) but I see what you mean.

I've never checked mine for strange appearance; I am too busy marvelling at the accuracy of them. Also, how nice they are.

I've noticed it. It's an illusion caused by a slight cant in the mag well as you've suggested. I think the angle between the mag well and barrel is less than 90 degrees. The sharp eye will spot it easily, especially in the AR10s.
